Apple scraps jelly

 If you are making apple sauce or apple juice, you can make use of the "scrap" pile to make a jelly so nothing goes to waste!

Caution, please use apples that have not been sprayed with pesticides if you are using apple peelings.

Ingredients:

  • Cores and peelings of 12 to 15 apples
  • water
  • 1.5 cups sugar
  • 3 tbsp bottled lemon juice

Add apple cores and peels into a large pot. Add water to just cover them. Bring them to boil and simmer until half the liquid has evaporated. Strain the solids out of the liquid and return to the pot.

Add 1/2 cup sugar and 1 tbsp of lemon juice per cup of liquid. Bring to boil again stirring frequently. When the liquid starts to gel, take it off heat and pour into sterilized jars. Can the jars as you normally would can jelly.
