
Borscht
A delicious soup from Ukraine that makes the best of your garden bounty
In Ukrainian culture, borscht often signifies the pride of one’s garden and the bounty that the garden provides. Borscht recipes vary from different regions in Ukraine as does the many ways each family may make it. What doesn't change is how delicious it is!
Ingredients:
4 cups canned tomatoes
1/4 pound butter
1 cup finely chopped onion
1/2 cup grated carrots
5 cups finely chopped cabbage
3 quarts water
1/2 Tablespoon salt
8 medium potatoes, boiled until very soft
3 medium beets, cooked and grated
2 Tablespoons fresh dill (or more to your taste)
Instructions:
Put ¼ pound of butter, onions, carrots and cabbage into a large pot and cook until soft but not browned. The onions should be translucent, the rest of the vegetables should be soft.
Add the tomatoes, water, salt, potatoes and beets. Continue to cook this for another ½ hour on low to medium heat, stirring occasionally. Add the fresh dill and cook for another 20 minutes or so.
If the soup seems too thick add a bit more water. Taste the soup at this point, add more salt or dill to taste. Serve hot with a dollop of sour cream and fresh bread.
