A simple casserole with big flavour made primarily with garden veggies!

Potato, broccoli and cheese casserole

Casseroles are a great way to use up garden vegetables. Try different combinations of meat and vegetables with this basic recipe to find a favorite!
  • 1.5lb potatoes
  • 2 tsp olive oil
  • 1tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Dash of paprika
  • Dash of cayenne pepper
  • 2 tbsp butter
  • 0.25 cups flour
  • 2 garlic cloves
  • 0.25 cups milk
  • 1 cup shredded cheese
  • 3 cups broccoli

Preheat oven to 450F. Coat cubed potatoes with olive oil and seasonings. Lay out on parchment paper and bake at 450F until tender. Boil broccoli until tender. In the skillet, melt butter and add flour to form a paste. Add milk and whisk until sauce thickens. Add cheese in to melt. In casserole dish, add potatoes, chicken, broccoli and cheese sauce. Top with a bit more shredded cheese and bake at 350F until melted.

Add in additional vegetables like carrots, green beans, corn, spinach or cabbage! This is a great recipe to add left over meat too, add chicken or bacon or ham for a different taste!
