
Chocolate zucchini muffins

- 1 1/4 cups whole wheat flour
- ¼ cup cocoa powder
- ¼ cup sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup grated zucchini
- 1 cup milk
- 2 eggs
- ¼ butter
- 2 tsp vanilla
- ½ cup chocolate chips or any berry
Preheat your oven to 375F. Spray muffin pan lightly with nonstick spray.
Stir together flour, cocoa powder, sugar, baking powder, baking soda and salt.
Grate the zucchini. If the zucchini is small, you can grate the skin. If the zucchini is large, peel the zucchini and hollow out the seeds before grating. Once grated, squeeze out the excess water and then measure out 1 cup.
In a separate bowl, add zucchini, milk, eggs, butter and vanilla. Whisk together.
Stir in the flour mixture and add in the chocolate chips or berries.
Bake for 16 to 18 minutes or until a cake tester is clean. Let sit in the pan for 5 minutes before placing on a cooling rake.
These muffins can be enjoyed fresh or freeze them to enjoy later.
