Eggplant pizza

Eggplants are a great addition to any healthy diet as they are high in fiber but low in carbs, rich in vitamins and minerals. Eggplant absorbs the flavors of what it is cooked with hiding the fact that any dish with them contains a vegetable. Shred them up and hide them in hamburgers or even lasagna.
Eggplant pizza makes a perfect after school snack or make different flavor combinations to enjoy a fun lunch on the go.
Ingredients:
- 1 large eggplant
- 1 tbsp olive oil
- 1 cup pizza sauce
- 3/4 cup shredded cheese
- Optional toppings
- Preheat oven to 400F.
Slice the eggplant into 1/4" rounds. There’s no need to remove the seeds from an eggplant. Brush olive oil on both sides and place them on parchment paper on a baking sheet. Sprinkle with salt and pepper or your favorite spices and herbs like garlic salt. Bake at 400F for 7 to 10 minutes.
Add tomato sauce as your pizza base and top with your favorite toppings and bake another 5 minutes or until cheese is melted.
