Grandma Martin's Pie

easy

  • Pastry for 22 cm (9 in) single pie crust (home-made or purchased frozen)
  • 1 L (4 c) fresh or frozen berries, (haskaps, blueberries, saskatoons, raspberries or strawberries)
  • 250 mL (1 c) plain yogurt
  • 150 mL (2/3 c) granulated sugar
  • 50 mL (4 Tablespoons) all purpose flour
  1. Roll out pastry and line a pie plate.
  2. Spread half to the berries in pie shell.
  3. In a bowl, combine yogurt, sugar and flour. Beat until smooth. Pour over fruit in pie shell.
  4. Spread remaining berries on top. 
  5. Bake at 220ºC (425ºº F) for 15 minutes. 
  6. Reduce heat to 180º  C(350ºF) and bake 35 minutes. 
  7. If berries were frozen, add 5 to 10 minutes to cooking time.

Yield:  6 servings, 1 deep dish 22cm (9 in) pie.
