Saskatoon berry pudding

Berry Pudding:

2 cups berries (fresh or frozen)

1/3 cup sugar

1.5 cups water

1/2 cup flour

 

  1. Combine water, berries and sugar in sauce pan.
  2. Bring it to boil using high heat.
  3. Once boiling, let simmer for 30 minutes.
  4. Add the flour to a bowl and add 1/2 cup water. Mix well.
  5. Add the flour/water to the berries and continue to simmer for 10 minutes.

Enjoy the berry pudding on it's own or use it as a topping on waffles, french toast, cake or ice cream. The amount of sugar can be adjusted to your personal taste - reduce it for more tartness or if high sugar is an issue in your diet.
