Easy fruit compote

Perfect fruit topping for breakfast or dessert!

Turn a pancake breakfast into an event with this simple recipe! Or serve on top of oatmeal, yogurt, ice cream or french toast for a pop of flavour.

Ingredients

  • 2 cups fruit, fresh or frozen. Chop into bite-sized pieces if neccessary

  • 2 tablespoons water

  • 3 tablespoons sweetener like sugar, honey, or maple syrup

Directions

  1. Combine 1 cup of fruit, along with all of the water and sweetener in a medium pot on the stove. Bring to boil on high heat.

  2. Reduce heat to medium, and add the rest of the fruit. Simmer for 5-10 minutes, until fruit has broken down to desired consistency. Stir frequently.

  3. Remove from heat and allow to cool before serving.

Tips

  • Increase sugar to taste if your fruit is very tart

  • Fresh, frozen, or canned fruit all work fine. Frozen fruit will just need to be cooked a little longer

Variations

  • Just about any fruit works great: strawberries, peaches, blueberries, blackberries, pears, apples, cranberries. Use up anything you have on the counter or in the freezer.

  • You can add extra flavour with lemon or orange juice, cinnamon, pumpkin pie spice, mint, ginger or vanilla too.

Storage

  • Cool completely and transfer to a jar. Keep in fridge for up to a week. Compote might thicken up in jar; add a little water and warm up before serving.
