Beef and rice kebabs

Make for a quick and tasty lunch!

These beef and rice kebabs cook up quickly, and taste delicious. Eat in a pita or wrap, for a take-out experience at home, or try serving over rice!

Ingredients

For the kebabs:

  • 1 lb (454 grams) lean ground beef

  • 1/2 cup rice, cooked and cooled to room temperature

  • 1 egg

  • 1 small onion, very finely diced or grated

  • 2 cloves minced garlic, or 1 teaspoon of garlic powder

  • Pinch of salt and pepper

  • 2 tablespoons dried parsley (optional)

For serving:

  • Optional toppings: plain yogurt or tzaziki, diced tomatoes, cucumber, shredded lettuce and grated cheese

  • Pitas, wraps, or rice

Directions

  1. Preheat oven to 350F, and line baking sheet with parchment paper or aluminum foil.

  2. Mix egg, onion, garlic, salt, pepper, and herbs (if using) in a medium sized bowl.

  3. Stir in ground beef and rice.

  4. Divide mixture into 12 parts, and use your hands to roll each into a 3 inch log. Place on lined baking sheet.

  5.  Bake for around 15 minutes, until no longer pink inside. Take out and let cool slightly

  6. Serve kebabs with your choice of toppings in pitas or wraps, or on top of rice

Tips

  • Can also be pan-fried or cooked on a grill; you'll keep a little more juiciness that way!

  • Thoroughly knead the mixture together, to help the kebab hold together. You can also refrigerate the beef mixture before shaping to chill it and make it easier to handle.

Variations

  • The seasonings can be adjusted to suit your taste. Some popular additions include: red chili flakes, coriander seeds, cumin, ginger, curry spice, chilli pepper, cilantro and mint.

  • This recipe can be tried with any ground meat.

Storage

  • Can be kept in a sealed container in the fridge for 3-4 days

  • Cooked kebabs can be frozen in an airtight container for up to a week
