Salmon potato bake

A hearty 3 ingredient dinner

This warm and filling supper can be made in the microwave or oven with only 3 ingredients, plus a little pepper for seasoning. It's a great way to use up mashed potatoes you have left over after a big meal.

Ingredients

  • 2 cups mashed potatoes (leftover or fresh)

  • 1 213 g can pink or red salmon

  • 1 cup cheddar cheese, grated

  • Pinch of pepper

Directions

  1. Preheat oven to 350F, and grease small baking dish.

  2. Open can of salmon and drain. Mash bones into the salmon meat, and spread across the bottom of the baking pan.

  3. Grate cheddar cheese. Sprinkle half on top of salmon, along with pepper.

  4. Spread the mashed potatoes on top of the salmon and cheese. Sprinkle the rest of the cheese on top.

  5. Bake in oven for 30 minutes.

Tips

  • Dish can be made in the microwave instead of the oven. Layer all ingredients in a microwave safe dish and microwave for 8 minutes, until cheese is melted.

Variations

  • This recipe can be made into patties instead. Mix all ingredients together, shape into patties, and pan fry in oil on the stove.

Storage

  • Keep in airtight container in fridge for up to 3-4 days.
