
Salmon potato bake
A hearty 3 ingredient dinner
This warm and filling supper can be made in the microwave or oven with only 3 ingredients, plus a little pepper for seasoning. It's a great way to use up mashed potatoes you have left over after a big meal.
Ingredients
- 2 cups mashed potatoes (leftover or fresh)
- 1 213 g can pink or red salmon
- 1 cup cheddar cheese, grated
- Pinch of pepper
Directions
- Preheat oven to 350F, and grease small baking dish.
- Open can of salmon and drain. Mash bones into the salmon meat, and spread across the bottom of the baking pan.
- Grate cheddar cheese. Sprinkle half on top of salmon, along with pepper.
- Spread the mashed potatoes on top of the salmon and cheese. Sprinkle the rest of the cheese on top.
- Bake in oven for 30 minutes.
Tips
- Dish can be made in the microwave instead of the oven. Layer all ingredients in a microwave safe dish and microwave for 8 minutes, until cheese is melted.
Variations
- This recipe can be made into patties instead. Mix all ingredients together, shape into patties, and pan fry in oil on the stove.
Storage
- Keep in airtight container in fridge for up to 3-4 days.
