Chili
easy
1lb browned ground beef
0.5 yellow onion
1 package chili seasoning
2 large cans of mixed beans
1 large can of diced tomatoes
1 can tomato juice
2 large potatoes, cubed
Cook beef and onions until beef is browned. Add to large crock pot. Add in seasoning, beans, tomatoes, tomato juice and potatoes. Cook on low heat for 8 hours and enjoy with sour cream and shredded cheddar cheese.
If you enjoy spicy food, add some chili and cayenne peppers to your chili as it's simmering for some added heat. If you grew eggplant, spagetti squash or zucchini, grate it up and add it to your chili as it simmers.
To stretch the food budget, serve a small amount of chili on a baked potato. Top with shredded cheese, sour cream, and green onions. You can also make your own chili poutine by slicing potatoes, tossing with olive oil and baking at 400F on a parchment lined pan with your favorite poutine seasonings. Top with your favorite cheese or cheese curds.
