Freezer bread and butter pickles

No time or equipment for canning? Try this easy recipe for Freezer Bread and Butter Pickles.
- I L (4 cups) thinly sliced cucumbers
- 1 onion, thinly sliced
- 15 ml (1 tbsp) pickling salt
- 250 mL (1 cup) vinegar
- 125 mL (1/2 cup) sugar
- 5 ml (1 tsp) tumeric
- 2 mL (1/2 teas) celery seed
Combine cucumber, onion and salt. Let stand 3 hours. Drain.
Combine vinegar, sugar, tumeric and celery seed. Mix well with cucumber mixture.
Spoon mixture with brine into scalded freezer containers. Leave 2.5 cm (1”) headspace.
Label, date and freeze.
Yield: 1 L
